Classic Greek Salad with Lentils
Use a couple of hands full of organic mixed greens as your salad base and top with :
1 Cup Cooked Organic Lentils
1 Cup Organic Cherry Tomatoes, halved
1/2 Cup Diced Organic Cucumber
1/2 Cup Organic Green & Yellow Peppers
1/3 Cup Kalamata Olives, pitted
1/3 Cup Organic Red Onion
1/3 Cup Crumbled Organic Feta Cheese
Top it off with fresh parsley and serve with an easy homemade vinaigrette
*TiP: You can add artichokes, pickles, asparagus or haloumi cheese to this salad and if you like some acidity, give your left over lentils a breath of fresh air with a quick brine, you can add your red onions to the brine too - delicious!
Home made vinaigrette
Combine the below ingredients and mix well:
1/2 Cup Organic Olive Oil
3 Tbsp Red Wine Vinegar
Juice of 1/2 lemon
1 tsp Organic Dijon Mustard
3/4 tsp each of dried basil & dried oregano
Quick Pickle:
Bring to the boil 1 cup White Wine Vinegar, 1 Tbsp Whole Grain Mustard, 1/4 Cup Sugar and pinch of salt. Remove from the heat , once cooled add the lentils and red onions and marinade for no less than 5 minutes. Drain the liquid and serve!
