Oatmeal Cups
Ingredients:
2 x 3/4 Cups Organic Oats
2 Tbsp One Organic Farm Organic Whole Flaxseed
2 Tbsp Chia Seeds
1 tsp Baking Powder
1/2 tsp Organic Ground Cinnamon
1/2 tsp Sea Salt
1/3 Cup Organic Maple Syrup or Honey
2 Organic, pastured eggs
1 tsp Organic Vanilla Extract
1/3 Cup Organic Coconut Oil
1/4 Cup Organic Applesauce
Blueberries, toasted coconut & lemon rind for serving
Directions:
Preheat oven to 350’F. Line muffin tin with liners.
In a bowl, mix and combine all the dry ingredients.
In a separate bowl, combine all the wet ingredients.
Mix the dry and wet ingredients well and scoop into muffin liners.
Bake for 25 - 30 minutes.
When serving, top with toasted coconut, fresh blueberries and lemon rind.
