Easy Energy Bars
Ingredients:
1.5 Cups pitted Organic Medjool dates, packed
1 Cup Unsalted Organic Roasted Peanuts
3/4 Cup ground One Organic Farm Organic Whole Flaxseeds
1/4 tsp Salt
1 Cup Chopped Organic Dark Chocolate, divided
Instructions:
Line an 8 x 8 pan with parchment paper, let the ends hang over the edge.
Combine the dates, peanuts, ground flaxseed and salt in a bowl of a food processor.
Pulse 6 times to break up the ingredients, then process continuously for about 2 minutes, or until the ingredients clump together.
Remove the lid, add 1/2 cup of chocolate. Process for another 20 seconds until well combined. Transfer the mixture to a baking pan and press in evenly.
Melt 1/2 cup of chocolate in a small saucepan over low heat or in a microwave dish for 20 second increments until melted. Stir until smooth and pour over the mixture, smoothing the top with an offset spatula.
Refrigerate the mixture for at least one hour or overnight, until the mixture is firm and the chocolate is set. Remove the set mixture from the pan, but into 12 bars using a hot knife. Bars will be firmer when chilled and softer at room temperature. It will keep up to one month refrigerated and a week at room temperature.
